The nine-day festival Navratri is here and the chatter around vrat-special ingredients like sabudana, makhana, kuttu, singhara has just picked up. Each year, scores of devotees observe ritualistic fasts or vrat, and on those days, they can only prepare their food from a set of limited ingredients. Sabudana has emerged to be a vrat favourite in all these years. Sabudana or tapioca balls, when soaked overnight, obtain this chunky, spongy quality that helps enhance the taste of any dish it is added too.
If you are a fan of sabudana khichdi, you would definitely love this sabudana bhel recipe too by Mumbai-based blogger and YouTuber Alpa. To make this Surat-special snack, add one tsp oil to puffed-up sabudana, give it a thorough mix and steam it. Now start making the masala – In a pan, heat some cinnamon, cloves, bay leaf and black pepper. Dry roast the whole spices for a minute and add them to a mixer blender. In the same pan, take fennel seeds, coriander seeds, cumin seeds and dry roast them. Add them to the same mixer blender, and blend all the spices together. Keep this masala aside.
Now bring back your bowl of steamed sabudana, add boiled and cubed potatoes, followed by fried peanuts, some green chillies, sendha namak, sugar, red chilli powder, lemon juice, the chaat masala you just made, pomegranate seeds, some fried aloo lacchas, fresh coriander leaves and freshly grated coconut. You can skip the masalas and other ingredients that you do not eat while fasting. Give everything a good mix, and you are done.
